Please refrain from doing anything regarding the melting of ice. That is a first or second grade project. The second title sounds more interesting. The effects of temperature on the reaction time of what? You need to be more specific. Let us know if you need more assistance.

The science fair is tomorrow so it is a little too late to see if the project is okay. At this point I suggest that you make sure that you have variables (something that is changing) and focus on data collection. You've haven't given much time to assistance you. I hope this bode well with your project.
